Avocado Ranch Dip
Hey there! I seem to always serve a veggie tray with some sort of dip for every family gathering. It was no different this weekend when we hosted a party for my son’s three year birthday. Really, what’s not to love… they’re crunchy and perfectly dippable…
dip it, dip it good….
…and the kids love them too so I can be sure that amidst all of the other distracting munchies (like candied bacon and chocolate cake, for example) they will at least get some veggies as they zoom past the appetizer spread stealing nibbles as they chase their cousins. My favorite dip is a homemade ranch dip but since going (mostly) dairy free, I’ve had to experiment with other options. Usually, hummus is my go-to dip but I’ve now figured out a DELICIOUS non-dairy avocado ranch dip. I use one avocado mixed with 1/2 cup of mayonnaise and 1/2 cup coconut milk (or coconut milk kefir) blended with traditional ranch seasonings. You can make this with dairy too if you choose by just subbing plain Greek yogurt for the mayo and coconut milk. If you want to use this as a salad dressing, thin it out with a little milk (dairy or non) and it works awesome on a leafy green salad. My other favorite way to use this dip is with oven fries or chicken fingers too or slather it on a burger. This healthy avocado ranch dip gets many raves from all who dip in. It’s kinda festive with its light green color too don’t ya think?
- 1 medium avocado
- ½ cup mayo
- ½ cup coconut milk (or coconut milk kefir)
- 2 tablespoons lemon juice
- 2 teaspoons dried dill weed
- 1 clove garlic, minced
- 1 teaspoon chives
- 1-2 teaspoons salt depending on taste
- Scoop out the avocado and place it in a blender or small food processor.
- Add all other ingredients and blend until smooth.
- Serve with small veggie dippers!
If dip is too thick, thin it out with a little milk (dairy or non-dairy). This works great as a salad dressing too.
