Homemade taco seasoning is one of the hand blended spice mixes that I always have stocked for simple easy meals. With no crazy additives like MSG or anti-caking agents that are commonly found in packaged mixes, you can be sure you’re keeping your diet clean. The seasonings can easily be altered to your taste and catered to your own preference by adding more or less of each spice. I make this multi-purpose homemade taco seasoning in bulk and keep it in a mason jar in my spice cupboard. This makes it super easy to just toss into taco meats, fajitas, quesadillas, dips, eggs, skillet meals and it can be used to season chili as well. Using high quality spices to start from will provide the best results with high flavor impact that’s totally terrific!

Serves: 4-6 batches
Ingredients
  • 4 tablespoons chili powder (no salt added)
  • 3 tablespoons ground cumin
  • 2 teaspoons pink himalayan salt (omit for a no salt option)
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons paprika
  • 1 teaspoon red pepper flakes
  • 1 teaspoon ground black pepper
  • 1 teaspoon Mexican oregano
  • 1 teaspoon ground coriander
Instructions
  1. Add all spices to a bowl and mix until well combined.
  2. Store in an air tight jar.
  3. To use for tacos: Add 2-3 tablespoons of taco seasoning with 2 tablespoons water to 1 pound of cooked meat.

We’re heading to a Superbowl gathering this Sunday and I had to look up which teams are playing…ha! That’s how I roll when it comes to sports. Unless my kid is in it, I’m blissfully unaware of the sports world in most cases.  I may not know which team to cheer for, but I DO know what foods I’ll be bringing to share. I’ll be bringing a rustic guacamole with tortilla chips, turkey teriyaki meatballs and this Greek feta dip with mixed veggie chip dippers!

Greek feta dip combines Mediterranean flavors of oregano and marjoram with feta, homemade mayo and plain Greek yogurt for a cravingly creamy concoction. The feta and yogurt combo give this dip a unique tang that’s incredibly tasty. Since making it yesterday, I’ve been addicted to dipping every cut vegetable and colorful veggie chips by the handful. Tonight, I’ll be putting this dip over baked potatoes for a tater topper with a tangy twist! In place of the Greek yogurt, you can also use sour cream for an equally delicious dip.

Serves: 2 cups
Ingredients
  • 1 cup crumbled feta cheese
  • ½ cup plain unsweetened Greek yogurt (or sour cream)
  • ½ cup mayonnaise
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice
  • ¼ teaspoon marjoram
  • ¼ teaspoon oregano
  • ¼ teaspoon black pepper
  • 1 tablespoon diced cucumber
  • 1 tablespoon diced tomato or sundried tomato
  • 1 green onion, diced
Instructions
  1. Place all ingredients except the cucumber and tomato into a blender (or a tall container for an immersion blender) and blend until combined.
  2. Top with the cucumber, tomato and green onion (can also just stir these in if preferred).
  3. Serve with fresh cut vegetables, veggie chips, pita chips or use as a baked potato topping!

I first had panna cotta when I was in Florence, Italy over a decade ago. How I miss those decadent Italian desserts! Panna cotta is traditionally made with a sweetened cream combined with gelatin. Use a high quality gelatin made from pasture raised beef for the best health benefits. Gelatin is a super food that provides amazing benefits such as improved elasticity for our skin as well as protects our joints. In this dairy free panna cotta, I’ve blended the gelatin in coconut milk and them combined with a coconut milk based Greek yogurt and pureed strawberries. Strawberry and lime work great together to give a little bit of tartness to the panna cotta that compliments the tang of the yogurt as well.

If you don’t need to avoid dairy, feel free to use a whole milk Greek yogurt for ultra creaminess. You can also use an unsweetened almond milk in place of the coconut milk for a slightly nutty twist. Either way you make it, the intense fresh and fruity strawberry flavor in this dairy free panna cotta is perfect for a light dessert or even for breakfast!

Strawberry Lime Dairy Free Panna Cotta

Ingredients
  • 1½ cups unsweetened coconut milk or almond milk (can use vanilla or sweetened if desired)
  • 1 tablespoon powdered gelatin
  • 1 pound strawberries, hulled
  • ½ cup vanilla coconut milk yogurt
  • 2 tablespoons honey
  • 1 tablespoon lime juice
Instructions
  1. Place ½ cup of the coconut milk in a small bowl and stir in the gelatin. Let stand 5 minutes.
  2. Boil remaining coconut milk and add gelatin mixture to the pan whisking to dissolve.
  3. In a blender, add all ingredients including the coconut milk-gelatin mixture and process until smooth.
  4. Slowly pour into 6 (6 oz) ramekins or molds.
  5. Refridgerate 8-10 hours until set. Serve directly in the ramekins or unmold upside down onto a plate by running a thin rubber spatula around the inside edge of the ramekin.
  6. Garnish with additional strawberries if desired.
