We usually do a large firework display in our culdesac with friends and neighbors for Independence Day. This year might be a little less fancy as we weren’t able to get any really good fireworks from the next state over. Instead, I’m going to let this pineapple salsa be the foodie fireworks while we watch a smaller display this year. Either way, good company plus good food, means a really good time.

Pineapple salsa might just be my new favorite summer snack food. Loaded with fruity salty sweet goodness, the flavors simply dance on your tongue and are perfect paired with chips or smothered over chicken or chops. I’m not usually a fan of salty sweet parings but the slight zip of spiciness balances out to a tropical tastiness only pineapple and jalapenos can provide. Bite by bite, I’m reminded of many moments lounging poolside in the Mexican Riviera. Minus the handsome helpful poolboy, of course. I’ll have to have hubby fill in for the role of poolboy and keep bringing me pineapple salsa and fresh made pina coladas 😉  Alas, I may have to settle to scarfing down this healthy snack by the campfire instead as we’re heading out camping soon for a 3 night getaway in one of Minnesota’s abundant forest landscapes. I’m excited for this pineapple salsa but even more excited to just be escaping the demands of daily life and getting in touch with nature.  I hope all of you enjoy a Happy 4th of July too!


Pineapple Salsa

Serves: 4
Ingredients
  • 2 cups fresh pineapple, finely diced
  • 2 tomatoes, seeded and diced
  • 1 small onion, diced
  • 1 jalapeno, seeded and finely diced
  • 1 clove garlic, minced
  • ¼ cup cilantro, chopped
  • 2 tablespoons lime juice
  • ¼ teaspoon pink himalayan salt
Instructions
  1. Place all ingredients in a bowl and stir to combine.
  2. Enjoy with chips, or on top of chicken, chops or sweet potatoes!
Notes
To can this: add 2 additional Tbs lime juice, heat to boiling and ladle into hot sterilized jars. Boiling water bath process 20 minutes for pints.

Gimme a huge scoop of this black bean and corn salsa and I’m instantly transported into a beach chair with my feet in the ocean fronting the Riviera Maya. So colorful, and SO extremely delicious, this black bean and corn salsa is the perfect compliment to tacos, fajitas, soups and anything else you might be cooking up for this Friday’s Cinco de Mayo festivities. This sassy salsa is tossed together in a mere ten minutes or less making it an easy appetizer. For the most part, it’s a pico de gallo but with corn and black beans added in for color and variety. With the addition of the black beans and corn, this salsa has a lot of healthy fiber and is filling enough that you could use this all by itself as a taco filling for a vegetarian taco.

Black Bean and Corn Salsa

Ingredients
  • 1 can black beans, drained and rinsed
  • 2 cups corn kernels cut from the cob or use 1 can, drained and rinsed (use no salt added for low sodium)
  • 3 tomatoes, seeded and diced
  • 2 jalapenos, seeded and diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • ¼ cup cilantro, chopped
  • juice of 1 small lime (about 2 tablespoons)
  • ½ teaspoon pink himalayan salt or to taste (omit for low sodium or use just a pinch)
Instructions
  1. Combine all ingredients in a dish and stir well.
  2. Serve over tacos, fajitas, chili or with tortilla chips!
Notes
* for low sodium, use only ¼ teaspoon of salt or omit the salt for sodium. Using ¼ tsp = 130mg/serving and no added salt = 59mg

After this past weekend’s indulgences, I’m in need of a little detox. This white bean stracciatella soup is the perfect remedy. Stracciatella is a simple vegetarian soup that begins with a broth. With the addition of white beans and kale, this soup is nutritiously hearty and contains a lot of fiber to help detox your system and get back to your normal self.

Stracciatella comes from an Italian word meaning rag or ribbons which is exactly what the eggs look like once they are poured into the broth. For non-vegetarian eaters, I like to add a little gelatin to this soup if I’m not using a homemade broth. Gelatin has amazing benefits for the digestive system as well as giving structure and shine to your nails, skin and hair. Who doesn’t love that?! This tasty soup comes together very quickly so you’ll be slurping up the goodness and reaping its benefits within minutes!

White Bean Stracciatella Soup

Ingredients
  • 3 cloves garlic, peeled and sliced thin
  • 1 tablespoon olive oil
  • 4 cups low sodium vegetable or chicken broth
  • 1 can cannellini beans, drained and rinsed
  • 2 tablespoons fresh chopped basil
  • ½-3/4 cups fresh chopped kale, leaves only
  • 1 tablespoon gelatin (optional - omit for vegetarian)
  • 2 eggs, beaten
  • ½ teaspoon pink himalayan salt, or to taste
  • pinch of cayenne pepper (optional)
Instructions
  1. In a stockpot, sauté the garlic slices in olive oil just until fragrant.
  2. Add broth, basil, beans, kale and gelatin (if using) and bring to a boil.
  3. Gently pour beaten eggs into the hot soup. They will form ribbons as they cook.
  4. Stir in salt and cayenne to taste.
  5. Serve hot!
Notes
Can use spinach in place of the kale if desired.
Also delicious topped with a small amount of parmesan or manchego!
